Pumpkin Cake with Apples

 

This yummy pumpkin care recipe has diced apples and wonderful spices to tickle your taste buds. If you are looking for a great dessert recipe for any occasion from baby showers to afternoon tea parties, try this easy recipe. This pumpkin cake can either be frosted with a nice cream cheese frosting or it can be dusted with confectioner's sugar.

Ingredients:

1/2 cup butter

1 1/2 cups sugar

2 eggs

1 tsp vanilla extract

2 medium sized granny smith apples pared and diced (1 1/2 cups)

1 cup pumpkin

2 cups all purpose flour

1 tsp baking powder

3/4 tsp baking soda

1/2 tsp salt

1 tsp pumpkin pie spice

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp cloves

1/4 tsp ginger

2 tsp freshly grated orange rind

In a mixing bowl beat the butter until creamy and add the sugar and beat well. Add the eggs and then vanilla. Stir in the apples and pumpkin. Mix the dry ingredients together and then add them to the batter along with the orange rind. Pour into a 9 inch bundt pan or cake pan. Bake in a 350 degree preheated oven for 50 to 60 minutes. Test cake with a toothpick and when it comes out clean, it is done. Cool for 10 minutes and remove from pan by turning out on a rack. Sprinkle with confectioners sugar or frost as desired. Serves about 16.
