What about those pumpkin seeds that have been scraped out of those pumpkins prior to carving? They make a great tasty and healthy treat so why not save them for roasting? Roasted pumpkin seeds are easy to prepare.

Preheat the oven to 350 degrees. Place about 3 cups of fresh pumpkin seeds with about 4 cups of water and 1 tsp of salt in a saucepan and bring to a boil. Boil this mixture for about 15 to 20 minutes. Drain the seeds and then blot them dry. Next, put them in a bowl and toss them with about 1 tbsp of olive oil, 1 tsp of salt, and 1/3 tsp of paprika. Next, spread the seeds in a single layer on a cookie sheet (non stick is best) and bake until golden brown about 20 to 30 minutes.

You can try different seasonings for your pumpkin seeds. Give soy sauce a try, or garlic salt, or onion salt, and even curry powder. The sky is the limit.

Pumpkin seeds should be stored in the freezer if they are not eaten right away. They can last through the winter this way. Enjoy.
